Homemade Turkey Noodle Soup

With Thanksgiving being this Thursday here in the states, I have a feeling there will be a lot of turkey being served which leaves the potential for a lot of leftovers. Leftover turkey is good for a few days, but after that I find I need a little variety.

I learned from my MIL to make the most delicious turkey noodle soup. I use my leftover turkey.

Often times I even dice 2 cups of turkey, put it into freezer bags and then throw it in the freezer.

Once the holidays have passed and we're needing a quick, warm meal for a cold day... I just pull my diced turkey from the freezer and dinner is served in less than 30 minutes.


The Recipe

4 Qt Broth/ Chicken Bouillon
1/2 - 1 c. chopped celery
1/2 - 1 c. chopped carrots
1/2 onion
2 c. turkey
pepper (0ptional)
1 pkg Reames noodles (found in the freezer section of the grocery store)

Add ingredients, boil then simmer for 20 minutes.

The wonderful thing is that all of the amounts of the added ingredients can be altered to your family's liking. No need for accurate measuring with this soup. Now that's my kind of cooking!

Now or Later

Just think... you don't have to serve this only with Thanksgiving turkey. If you're like me you may be buying an extra turkey at the low prices to have in the freezer for a later date. The cold months here last for quite some time. Of course you could also substitute chicken for the turkey as well.


For Others

You could even make this soup to share with a friend or neighbor... just because. We made this a few weeks ago. One batch makes enough that I was able to take some to our neighbors while it was still warm to eat as their dinner that night or save it for later in the week.

What an easy way to give the gift of thought without requiring extra time or money. Who do you know that could use a warm bowl of homemade soup?

  1. I've been making chicken soup with the 30 Day Gourmet recipe. We really like it! It's similar to you recipe, actually. I freeze the soup in different sized containers so that we have some for the whole family and smaller sizes for just a couple of us at lunch time. When I freeze it, I don't add the noodles because they soak up so much of the water. I just add them when we're going to eat it. I'm going to try it with rice sometime too!

    I love hot turkey sandwiches made from the leftovers. It's really nice if there's leftover cranberry sauce too!

  4. Our church hosted an early Thanksgiving dinner at an elderly folks residence. Since I brought turkey, I made a Turkey Frame soup. After carving all the meat, you simmer the bones to get all the wonderful goodness out of them. Then fish the bones out and add frozen veggies and a cup of rice. It's delicious. I've been eating it all week, but still had enough to freeze for later. Love the idea of adding frozen noodles. Yum! Aloha! *;)

  5. What a great idea to freeze for another day! My mom always plans to cook more than enough so there's plenty of leftovers for everyone to take home.

  6. I love turkey soup and in fact, in dayhome, we just made "stone soup" out of the turkey carcass leftover from our thanksgiving. I always leave enough meat on it to make a good soup and the kids love the idea of bringing their own addition to chop up and add to the soup. It's a different soup everytime depending on what the kids decide to bring but we've never had one where it wasn't delicious!

  7. I love a grilled turkey and cheese sandwich - with leftover sides. I can personally eat this for several days in row at lunch time.
